Ingredients
- 3 cups grated zucchini
- 1 small red onion, chopped
- 1 cup flour
- 1 2-cup bag of pre-shredded mozzarella cheese
- 3 beaten eggs
- 1/4 cup olive oil
- 1 teaspoon dried basil (or 2 teaspoons fresh, chopped)
- 1 teaspoon baking powder
- 1 teaspoon salt
- lots of pepper to taste
- 2 cloves garlic, minced
- Pinch of nutmeg
- 1/4 cup Parmesan cheese, freshly grated, plus more for topping
Directions
- Preheat oven to 350°.
- Beat the eggs in a large mixing bowl, then add the remaining ingredients.
- Spray a pie pan with nonstick cooking spray. Add the mixed ingredients and evenly smooth out with a spatula. Sprinkle with Parmesan cheese.
- Bake for 45 to 50 minutes until golden brown and the middle is set.
- Let cool 10 to 15 minutes on a wire rack before serving.
